Trail Mix Cookies
- 1/2 Cup Butter, room temperature
- 1 Cup Flour (can be Whole Wheat, All Purpose or Gluten Free)
- 3/4 Cup mixture of (chopped almonds, dried fruit, chocolate chips) note: *
In a electric mixer bowl, combine butter, sugar and brown sugar about 2 minutes on low speed (2) until mixture is light and fluffy.
Add egg and vanilla.
In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon and salt. Slowly add dry mixture into wet until just combined.
Stir in oats, nuts, dried fruit and chocolate chips. Place plastic wrap over bowl and refrigerate for approximately 30 minutes.
Preheat oven to 350 degrees F.
Spoon chilled dough onto lightly greased cookie sheet in 1 in balls. Bake for 9-10 minutes. Cool on wire rack. Apx yield: 12 cookies
* Try mixing different dry fruit and nut combinations (blueberries, cherries, cranberries, raisins, toasted almonds, walnuts, pecans, peanut butter chips, chocolate chips, etc.)
