Sugar Free Strawberry Jam
Items you will need:
Water Bath Canner
6 - 8 oz canning jars, Clean & Sanitized
6 - Canning 2 pc lids, Sanitized
Canning Jar Lifter
Ingredients you will need:
4 Cups Fresh or previously frozen crushed strawberries
1 Cup Xylitol
2 tsp Calcium Water (included in Pomona Pectin)
2 tsp Pomona Universal Pectin (purchased locally at Whole Foods)
Combine 4 cups crushed strawberries and 2 teaspoons calcium water in medium size bowl. Stir well.
In a separate small to medium mixing bowl combine 1 cup Xylitol and 2 teaspoons Pomona Universal Pectin. Mix well.
Pour fruit mixture into medium size pot. Over medium heat bring to boil temperature.
Quickly add Xylitol and pectin mixture. Stir well to avoid lumping. Return to boil temperature. This step should take 2-3 minutes. Remove from heat.
Pour into clean, sanitized jars leaving 1/4 inch headspace. Wipe jar rims and adjust lids into place.
Place filled jars into boiling water bath canner making sure you have 1 -2 inches water covering jars. Return to boil and time for 10 minutes.
Remove jars from water bath canner and allow to cool to room temperature for jars to seal. Jam will thicken once cooled (12-24 hours).
