- 4 cups crushed strawberries
- Juice of 1 coconut (1 1/2 cups)
- 1 cup pineapple juice (fresh-vitamix)
Place strawberries, juice of coconut, toasted coconut, pineapple juice in pan. Add pectin & heat to boil for 1 minute. Slowly add sugar. Add coconut rum and bring to a boil. Cook for 4-5 minutes, while stirring. Stop heat and let sit for 30 seconds. Jar.
YIELD: 9-10 jars
