•3 tomatoes •1 fresh jalapeno pepper •1 onion •¼ cup fresh cilantro •1 tablespoon of lemon juice •1 clove of minced garlic

Preparation instructions
Remove seeds from tomatoes and dice. Do the same with the jalapeno pepper. Dice the onion. Place all three vegetables in a medium bowl. Add the cilantro and toss to combine. Add the lemon juice and garlic, stirring gently to blend flavors. Refrigerate overnight before serving for best flavor.  

Pickled Okra

-4 LB small okra
-1 Pint white vinegar
-1 QT water
-3/4 Cup salt
-1 Pod hot pepper per jar
-1 Bud garlic per jar
-1/2 tsp dill seed per jar

Preparation instructions:
Wash, drain and trim stem ends from okra.  Pack pods firmly into jars.  Add pepper, garlic and dill seed to each jar.  Cover with hot brine (water).  Adjust lids and process in boiling water bath for 10 minutes.  Let stand several weeksfor best flavor.  Makes 4-5 pints.
